What does our Oyster Bar service consist of?
Our bar service includes 2 hours of service, 1 bushel of Pacific Oysters (120 count), set up & disposal, serving utensils, & various accoutrements.
What areas do you service?
We travel for free within 50 miles of Santa Cruz County. We gladly service all of the Bay Area, Monterey, Carmel Valley & even beyond for a mileage surcharge.
What other raw offerings do you provide?
In addition to oysters; poke, caviar, clams, ceviche, tuna sashimi, & shrimp (cooked) can be added to any service option.
Can we get extra oysters or service?
Of course! Additional oysters can be provided for $200/bushel. Half & quarter bushels are also available. Additional hours of service are $50 per shucker, per hour (2 shuckers are minimum on all jobs.)
Where do the oysters come from?
Unless otherwise specified we offer & prefer Pacific Oysters cultivated on the west coast. They are a medium-small size oyster. Extra small Pacifics can be ordered at no additional cost. Kumamotos, Blue Points, & other species are available upon request.
What toppings do you offer?
Our service includes the traditional accoutrements - cocktail sauce, horseradish, a mignonette, lemons & hot sauce. In addition we love to work with your menu or event theme to coordinate one additional pairing. Additional toppings such as caviar & tobiko are charged accordingly. We like to have fun with this and get creative!
Do you do theme parties or custom styling?
We are happy to tailor our styling details to suit your event & love the opportunity to dress to theme. We have years of experience in food styling & table setting. At Shucked, we love draw upon our resources to add that special styled touch to your event down to every little detail we provide. Please see our Instagram gallery for inspiration.
What do you need to provide for our oyster bar catering service?
We bring the bar, serving utensils, & everything else needed. We take care of the clean-up & disposal. From you we simply need:
* level ground, indoors or out
* shaded area or umbrella If the event is outdoors
* 4 feet of clearance in front of & behind our bar.
* proper lighting
Please let us know if your site is unique, such as more than 20 stairs to climb, or more than 100 feet from drop off/load-in, so we can plan accordingly.
What do you need to provide for roaming service?
We’d love a little kitchen space or somewhere we can set up a table & cutting board / plating area “behind the scenes.” Our charming server(s) will then roam your event with beautiful trays of raw goodness & cocktail napkins.
How do you serve your poke/ceviche/sashimi?
We offer 2 options for enjoying our raw items at your event… serviced / unserviced. We can include it dressed beautifully in our raw bar service or provide it simply sold by the pound to be dished & served your own way. ($45/lb / $30/lb) We can also roam your event with these items served festively in hors d’oeuvres portions on trays for the serviced price.
Where does the tuna poke / ceviche / sashimi come from?
Our Hawaiian style poke is made with the freshest sashimi grade tuna from H&H Fresh Fish Co. Our original recipe has been enjoyed by our shoppers for over 10 years & is made fresh for your event. We source that same sustainable tuna for our sashimi and make our ceviche with fresh Monterey Bay rockfish.
What are your recommended portions?
As a general guideline we suggest two oysters per person as a tasting, three - five as an hors d'oeuvres, & six as a small plate. For poke, sashimi, ceviche we suggest a tasting as 1 oz per person, 2-3 oz as an hors d'oeuvres, & 4 oz as a small plate.. For caviar, 500 gs of caviar is the equivalent recommended party size to 1 bushel of oysters or 15-20 gs per person.
Could we just buy oysters and other raw menu items from you without the extra catering service?
Absolutely! We offer oysters unshucked sold per peice for $1.25 each & you are welcome to purchase any quantity. Tuna poke, sashimi, ceviche, & caviar are all sold unserviced by the pound. Please contact us and let us know how many lbs you’d like or let us help you determine that. In most cases, uncatered menu items will need to be picked up at the H&H Fishhouse in the Santa Cruz Harbor or from one of H&H’s many farmers’ market locations throughout Santa Cruz and the bay area. What is your deposit and cancellation policy?
A $300 deposit is required by check, credit card, or PayPal to confirm your event reservation. Cancellations made less than 4 days prior will be charged a $300 cancellation fee. All cancellations must be made in writing.
